La cooperativa Gólya, situada en el VIII distrito de Budapest, fue fundada hace 7 años por seis jóvenes húngaros, con el objetivo de crear una comunidad para los jóvenes basada en el cooperativismo. Empezó como un bar y un espacio de trabajo abierto (open space) y rápidamente evolucionó y se amplió para dar acogida a nuevas ideas e iniciativas (como, entre otras, una guardería cooperativa). En el tercer año de funcionamiento, se inició también un servicio de cocina en la cooperativa. Con esta velocidad de crecimiento, la cooperativa se vio rápidamente en la necesidad de ampliar el espacio y, en 2018, Gólya decidió adquirir un edificio más grande para trasladarse. Tras un largo y costoso proceso de renovación para el que contaron con la ayuda de muchos voluntarios, el edificio actual, que recibió el nombre de Kazán Community House, abrió sus puertas en 2019 y, actualmente, acoge a 8 organizaciones asociadas, en su mayoría cooperativas y organizaciones sin ánimo de lucro. Entre estas organizaciones se incluye un taller cooperativo para artesanos, una guardería cooperativa, un gimnasio gestionado de manera cooperativa, una radio comunitaria, una cooperativa de consumo, el mayor sitio de noticias de Hungría en el que se debaten todo tipo de temas desde el punto de vista de los trabajadores, una ONG centrada en problemas de vivienda y otra centrada en la construcción de viviendas para indigentes. Esta nueva comunidad de cooperativas y organizaciones asociadas ha dado lugar a la Kazán Community House que trata de promover el cooperativismo y la colaboración en Hungría de manera colectiva, tanto en los ideales como a través de fundaciones institucionales concretas.
En 2020, Gólya cuenta con 18 miembros de pleno derecho en la cooperativa. Gran parte de ellos son jóvenes de menos de 30 años y, para la mayoría, Gólya es su primer lugar de trabajo. Para sus miembros, Gólya es una comunidad de apoyo formada por amigos, un lugar en el que encuentran estabilidad y un ambiente seguro en el que pueden evolucionar y centrarse en intereses significativos para la comunidad. Actualmente, Gólya está tratando de establecer nuevas unidades cooperativas para diversificar sus actividades. Las unidades ya establecidas incluyen una unidad centrada en trabajos de construcción, tanto para clientes externos como para la cooperativa; una unidad que gestiona el bar y se encarga de la organización de eventos; y una unidad de mensajería encargada de realizar las entregas en bicicleta. La idea es encontrar otra unidad, en esta ocasión para gestionar una cocina en la cooperativa.
¿Cuál es el objetivo?
La idea es que la cocina de Gólya responda a distintas necesidades: durante el día se proporcionarán menús saludables, elaborados con ingredientes procedentes del comercio ético a precios asequibles para los trabajadores de la Kazán Community House y para el vecindario. También se proporcionará un servicio para los asistentes a las fiestas y los conciertos que se organizan en las instalaciones, para ampliar los servicios que ya ofrece el cáterin de Gólya durante los festivales y conferencias.
Además de satisfacer estas necesidades básicas, la unidad de cocina de Gólya supondría una nueva oportunidad para que los miembros implicados desarrollen su trayectoria profesional y se diversifiquen y enriquezcan las posibilidades de la cooperativa para los posibles nuevos miembros. Un aspecto clave de esta idea es que la nueva unidad de cocina de la cooperativa Gólya encaja a la perfección en el ecosistema ya existente. La unidad de construcción de la cooperativa puede encargarse de construirla en el área pensada para su ubicación y la unidad de mensajería podría entregar los productos a los clientes. Además, la idea es obtener la mayor parte de los ingredientes de la cooperativa de consumo Vörösbegy.
Los motivos por los que no se ha establecido antes esta unidad son principalmente motivos económicos. Al trasladarse a las nuevas instalaciones, la cooperativa tomó una decisión factible pero no siempre sencilla y, en ocasiones, incluso insegura, puesto que ahora la cooperativa debe devolver los préstamos lo más rápidamente posible. Esto implica que cada gran cambio en la cooperativa requiere una parte de financiación externa. Gólya ya ha realizado distintas campañas de crowdfunding que han funcionado muy bien (por ejemplo, para construir una terraza en la azotea del edificio) y se ha beneficiado de micropréstamos de amigos. Sin embargo, estas opciones son limitadas y la financiación de la nueva cocina no puede apoyarse totalmente en ellas. Esto es lo que ha llevado a Gólya a solicitar la ayuda de la Alianza Cooperativa Internacional para obtener la inversión necesaria para la construcción de la nueva cocina en la cooperativa.

Gólya Cooperative, located in the 8th district of Budapest, has been founded 7 years ago by six young Hungarians with the aim of creating a community hub for youth built around cooperativism. It has started out as a bar and an open space and it quickly started growing by attracting many people with ideas for new initiatives (such as a kindergarten cooperative). In the third year of operation a kitchen was also started at the Cooperative. This dynamic growth meant that space was running out and in 2018 Gólya decided to buy large building to move there. After a lengthy and costly renovation with the help of many volunteers, the current building, named Kazán Community House opened in 2019 and houses 8 further allied organizations, mainly cooperatives and NGOs. These include a workshop cooperative for handicraft workers, a kindergarten cooperative, a cooperatively run gym, a community radio, a consumer cooperative, the largest Hungarian news site discussing topics from a workers’ perspective, an NGO focusing on housing issues and running a housing cooperative and another working on building homes for homeless people. Collectively, this new community of allied cooperatives and organizations has formed the Kazán Community House to further the issue of cooperativism and collaboration in Hungary together, both in spirit and by laying concrete institutional foundations.
By 2020, Gólya has 18 full members in the cooperative, a good proportion of them in their 20s, many of them having Gólya as the first workplace of their lives. For its members, Gólya means a supportive community of friends, a place of stability and a secure environment where they can grow and pursue meaningful interests. Currently Gólya is in the process of establishing new cooperative units for its diversifying activities. Already established units include a unit doing construction work both for customers and the Cooperative, a unit running the bar and organizing its events, and a courier unit doing deliveries by bike. The plan now is to found another unit, this time one that will run a kitchen at the Cooperative.
what we’d like to accomplish
A kitchen at Gólya will serve many needs: during the day it will provide healthy and ethically sourced meals at an affordable price for both people at Kazán Community House and people who live nearby. It will also serve people who come in the evening for the concerts and parties and it will make it possible to greatly extend the already running catering activity of Gólya at festivals and conferences.
Besides satisfying these very direct needs, a kitchen unit at Gólya would mean an opportunity for involved members to develop their professional lives and to diversify and enrich what the Cooperative can offer for new recruits. A key aspect of this idea is that a new kitchen unit at Gólya Cooperative will fit very well into an already existing ecosystem: our construction unit is fully capable of building up the required area, while our courier unit will be able to deliver its products to customers. Moreover, we intend to source as many of the ingredients as possible from Vörösbegy Consumer Cooperative.
The reasons for not starting this new unit so far have been purely financial. By undertaking the move to the new building, the Cooperative has chosen a manageable, but difficult and sometimes precarious path: it has to repay loans as fast as possible. This means that currently each major development at the Cooperative requires external funding to some extent. In the past Gólya has run several successful crowdfunding campaigns (e.g. for the building of a rooftop terrace), besides taking microloans from friends. These options, however, are limited and in the case of funding for the new kitchen they cannot be relied on completely. This is why Gólya decided to ask the help of the International Cooperative Alliance in making the necessary investments for the construction work of a new kitchen at the Cooperative.

Based on our detailed estimates, a total sum of EUR 7,354 would enable us to build up the kitchen area completely.
